Dinner – Bacon-Wrapped Turkey Meatballs
Ingredients
- 10 slices bacon
- 1 ounce pork rinds
- 1 cup spinach chopped and divided
- 3 sprigs thyme
- 3 small red chilies
- 1 small onion
- 1/2 medium green pepper
- 2 pounds ground turkey
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 2 whole large eggs
Instructions
- 1. Preheat your oven to 380°F. Lay your bacon slices on a baking sheet lined with a foil, and let it cook for 20
- minutes.
- 2. Grind your pork rinds into powder using a food processor. Then, grind ½ cup of your spinach, thyme, red chilies,
- onion, and green pepper.
- 3. Pour the resulting mixture in a large mixing bowl, add ground turkey, salt, ground black pepper and stir
- thoroughly. In the end, add eggs and mix again well.
- 4. Now remove and set aside your bacon and drain off any surplus grease from the baking sheet.
- 5. From the above turkey mixture make 10 meatballs and put them on the baking sheet. Bake for at least 15
- minutes until the juices run clear.
- 6. At that time make your spinach ‘butter’ by adding remaining ½ cup of spinach to the rendered bacon fat. Here
- you can add seasoning of your choice.
- 7. Lastly, process the mixture until spinach leaves are no longer visible and everything has fully combined.
- 8. Wrap each meatball with the slice of bacon and tie using the toothpick.
- 9. Serve with a small spoon of the spinach ‘butter.’
