Hide Those Veggies Mom Sauce

Ingredients

  • 1 (32 ounce) can diced tomatoes
  • 1 (6 ounce) can tomato paste
  • 1 (1 1/4 ounce) packet spaghetti sauce, seasoning
  • 4 ounces salsa (more if you like- heat your decision)
  • 1 zucchini, diced
  • 1 purple onion, diced
  • 2 garlic cloves, mashed
  • 1 teaspoon cumin
  • 2 tablespoons italian seasoning
  • 1 cup swiss chard, stems removed or 12 ounces spinach, frozen, thawed and squeezed
  • 1 lb hamburger (could also be a mix of ground meats)
  • 1 red pepper, cut up (optional)
  • 3 carrots, diced (optional)
  • pasta, of your choice
  • parsley
  • cheese, shredded

Instructions

  1. Brown beef with onion, cumin, and garlic, drain, and set aside.
  2. In a large kettle mix together onions, garlic,(hamburger if using) and all other ingredients, bring to a rolling boil, stirring frequently then turn to simmer for at least 30 minute.
  3. The longer it simmers the richer the flavors.
  4. Use over pasta and sprinkle parsley and shredded cheese over top.
