Chicken Lasagna

Ingredients

  • 1/2 cup butter
  • 1/2 cup flour
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 2 cups milk
  • 2 cups chicken broth
  • 2 cups grated mozzarella
  • 1/2 cup parmesan cheese
  • 1 Tablespoon dried onion
  • 1 1/2 teaspoons dried basil
  • 1/2 teaspoon dried oregano
  • 1 teaspoon black pepper
  • 8 oz. lasagna noodles, uncooked
  • 2 cups cottage cheese
  • 10 oz. frozen spinach, thawed, drained
  • 2 cups chicken, cooked and chopped
  • 1/2 cup parmesan cheese

Instructions

  1. Cheese Sauce
  2. 1. Melt butter in 2-quart saucepan.
  3. 2. Stir in flour, salt, and garlic powder. Cook stirring constantly until mixture begins to boil.
  4. 3. Add milk and broth stirring constantly. Boil and stir 1 minute.
  5. 4. Add mozzarella, Parmesan, onion, basil, oregano and pepper.
  6. 5. Cook over low heat, stirring constantly, until cheese is melted.
  7. 6. Spread half of cheese sauce (about 1 1/2 cups) in an ungreased 9x13 glass baking dish.
  8. 7. Top with 3 or 4 uncooked noodles, overlapping if necessary.
  9. 8. Spread half the cottage cheese over noodles, then half the spinach, then half the chicken.
  10. 9. Repeat layers and cover all with remaining sauce.
  11. 10. Sprinkle with another 1/2 cup of Parmesan cheese and dust with paprika.
  12. 11. Bake for 35-40 minutes at 350 degrees.
  13. 12. Let stand 15 minutes before serving.
