Cornbread Waffles with Crockpot Chili

Ingredients

  • 1 pound extra lean ground turkey
  • 1/2 tsp olive oil
  • 1 large white/yellow onion diced
  • 1 can low sodium whole pealed tomatoes
  • 1 can sugar free tomato sauce
  • Serrano chiles dice, to taste
  • 1 packet chili seasoning
  • 1/2 packet beefy onion soup mix
  • 1 clove garlic
  • 1 1/2 cans black beans
  • 1 cup whole wheat flour
  • 1 cup cornmeal
  • 1/4 cup splenda
  • 1 tsp baking soda
  • 3/4 tsp salt
  • 1 cup plain nonfat yogurt
  • 2 eggs beaten
  • milk until mix thin enough
  • shredded lettuce
  • grated cheese
  • 1 tomato diced
  • salsa
  • jalapenos
  • olives

Instructions

  1. Chili:
  2. Brown turkey in olive oil.
  3. Put all ingredients (through black beans) in crockpot.
  4. Cook on high 5-8 hours.
  5. Cornbread:
  6. Mix dry cornbread ingredients (flour, cornmeal, splenda, baking soda, salt).
  7. Stir in yogurt and eggs until well blended, don’t over mix.
  8. Add milk until mix is thin enough.
  9. Cook cornbread in waffle iron.
  10. Top waffles with chili and other toppings (lettuce, cheese, tomato, salsa, jalapenos, olives) and serve.
