Cornbread Waffles with Crockpot Chili
Ingredients
- 1 pound extra lean ground turkey
- 1/2 tsp olive oil
- 1 large white/yellow onion diced
- 1 can low sodium whole pealed tomatoes
- 1 can sugar free tomato sauce
- Serrano chiles dice, to taste
- 1 packet chili seasoning
- 1/2 packet beefy onion soup mix
- 1 clove garlic
- 1 1/2 cans black beans
- 1 cup whole wheat flour
- 1 cup cornmeal
- 1/4 cup splenda
- 1 tsp baking soda
- 3/4 tsp salt
- 1 cup plain nonfat yogurt
- 2 eggs beaten
- milk until mix thin enough
- shredded lettuce
- grated cheese
- 1 tomato diced
- salsa
- jalapenos
- olives
Instructions
- Chili:
- Brown turkey in olive oil.
- Put all ingredients (through black beans) in crockpot.
- Cook on high 5-8 hours.
- Cornbread:
- Mix dry cornbread ingredients (flour, cornmeal, splenda, baking soda, salt).
- Stir in yogurt and eggs until well blended, don’t over mix.
- Add milk until mix is thin enough.
- Cook cornbread in waffle iron.
- Top waffles with chili and other toppings (lettuce, cheese, tomato, salsa, jalapenos, olives) and serve.
